Pardon Our Mess, We're Still Baking

About Me:
I love cookies but all the ones I bought in New York were either too oily, too thick, too dry or didn’t have enough chips, so I set out to make the perfect cookie; crispy, chewy, just the right amount of sweetness in the batter and with lots of quality chocolate chips. I found the perfect chips with 60% cacao and tested several batter recipes baking them without the chips first. I figured if I could create a plain cookie that was delicious on its own, adding the chips would send the flavors into the stratosphere! After tweaking several recipes and eating way too many 'test cookies' I found the perfect combination and my cookie was born! The tag image is from one of Matt’s Elementary school pictures where he had a fantastic bowl cut and wasn’t smiling. His expression seemed to say, “don’t touch my cookies!” and the idea that this cute little boy might not be so harmless if you touched his cookies was fun. The whole thing had a 70’s throwback feel which made the cookies feel like a classic, so far so good. The real test came when I sold some to a girlfriend who gave them as Christmas gifts to her son’s teachers. A few days later one of the teachers came up to her, smacked her on the arm and said, “Why didn’t you tell me those cookies were so good? I opened them in front of my mother in law and I had to share them. Now I only have three left!” That’s when I knew the cookies lived up to their name!
